No time to eat lunch? To avoid the classic ham and butter sandwich at the cafe next to the office, I suggest you a recipe that you can make the day before and slip into your lunchbox for the next day.
It's a balanced and healthy recipe for lunch: vegetables and proteins. If you don't feel full with this, you can accompany it with a soup or a salad.
Ingredients :
1/2 grated cauliflower in semolina
1 small bell pepper
1 spring onion
1 egg + 1 egg white
25 g of organic soy flour for 200 g of vegetables
Coriander
fresh ginger
Curry, turmeric powder (your choice or both ;-))
Olive oil
Cooking :
Preheat your oven to 150°.
1/ Chop the spring onion, pepper and coriander. Grate the ginger. Mix everything with the grated cauliflower. Add the powdered spices. Mix well.
2/ Beat the egg and the egg white. Mix with the previous preparation.
3/ Add the soy flour and mix to obtain a homogeneous paste.
4/ On a baking sheet, make palets with the preparation. With a pastry brush, brush the top side of the puck with olive oil.
Bake for 40 to 45 minutes
